Never could get your New Orleans Barbecued Shrimp to come out right? Not enough seasoning? Too much seasoning? No dipping juices? Well, that will never happen to you again, because my newest product is "barbecued shrimp in a bottle." All you do is pick up some jumbo shrimp from the seafood market, place them into a high-sided pan, pour about a can of beer over them, drizzle on a stick or two of melted butter or margarine, and toss everything together with a generous helping of my BBQ Shrimp Seasoning. All that’s left to do is to pop them into a hot oven for about 15 minutes or so, stir them occasionally to distribute the spice, and patiently wait for them to become finger-lickin’ good. The only other thing you’ll need is some hot French bread to sop up the drippings! Hint: Also try substituting chicken tenders, stripped pork, crawfish tails, and cleaned raw crabs for the shrimp. The creative possibilities are endless and limited only to your imagination!

I created "bronzing" to be a lighter more delicate form of blackening. To bronze, use a non-stick skillet, about a tablespoon of margarine, and my bronzing seasoning. Just sprinkle it on what you want to bronze, rub the seasoning in with your hands, wrap tightly in plastic film and refrigerate for at least 3 hours. Then put the margarine in the skillet and bronze your steak, pork, chicken breasts, fish, shrimp, mushrooms, eggplants, zucchini, soft-shell crabs and just about anything else you can imaging over medium-high heat until it turns a toasty brown. Unlike "blackening", it can be done inside, doesn't create a lot of smoke, is low in saturated fat, and tastes great. Because my bronzing mix is so versatile, it can be used on your steaks and chicken when you barbecue! But use it sparingly - it's concentrated!

You'll want to use it on every chicken, turkey, duck, goose, game hen, or capon you cook. First, season the meat lightly with salt and pepper, because essentially the blend is low- salt.  Then sprinkle on the poultry blend quite liberally and rub it in well with your hands.   I suggest you then wrap the meat in plastic and stash it in the refrigerator for at least an hour or so to allow the mixture to act as a dry marinade. All that's left is to cook it any way your heart desires!

This is the ultimate in flavoring wild game!  Use it on ducks, geese, poule deau, rails, snipe, deer, rabbits, squirrels, doves, quail, bear, pheasants, moose, elk and everything else you hunt (or your brother-in-law brings to you!).  First, marinade the game in whole milk to remove any unwanted flavors.  Then sprinkle on the mix, rub it in well, cover it with plastic wrap, and let the blend develop in the 'fridge, preferably overnight.  Then cook it according to your favorite recipe and if you don't tell your guests the game is "wild," they'll never know!
